Ingredients

  • 1 ½ cup panko breadcrumbs
  • 1 teaspoon kosher salt, divided
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons all-purpose flour
  • 1 large egg
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried oregano
  • 1/8 teaspoon cayenne pepper (optional)
  • Freshly ground black pepper, to taste
  • Olive oil spray
  • Dipping sauces: ketchup, low-fat ranch dressing, BBQ sauce, honey mustard, marinara (optional)

Instructions

  • Toast panko breadcrumbs with olive oil and salt until golden brown.
  • Cut chicken into ¾-inch cubes, season with salt and pepper.
  • Set up dredging station with flour, egg mixture, and seasoned panko.
  • Dredge chicken cubes in flour, dip in egg, then coat with panko.
  • Preheat air fryer to 400°F and lightly spray basket with olive oil.
  • Arrange chicken in air fryer and spray tops lightly with olive oil.
  • Cook for 5 minutes, shaking halfway, until golden and crispy.

Notes

Press the panko firmly onto the chicken for a better crust.
