- 1 yellow onion
- 3 cloves garlic
- 1 Tbsp olive oil
- 1/2 lb. Italian sausage
- 3 oz. tomato paste
- 1 (28 oz.) can crushed tomatoes
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 cup water
- 12 oz. spaghetti
- 1 cup small curd cottage cheese
- 1/4 cup grated Parmesan cheese
- 1/4 tsp freshly cracked black pepper
- 1 cup shredded mozzarella cheese
- 1 Tbsp chopped parsley (optional garnish)
Instructions
- Heat olive oil in a skillet and cook Italian sausage until browned.
- Add chopped onion and minced garlic, cooking until soft.
- Stir in tomato paste, crushed tomatoes, Italian seasoning, salt, and water; simmer.
- Boil spaghetti in salted water until al dente, then drain.
- Mix drained spaghetti with the meat sauce.
- Combine cottage cheese, Parmesan, and black pepper in a bowl.
- Layer half the spaghetti-sauce, cottage cheese mixture, and remaining spaghetti-sauce in a greased casserole dish.
- Top with shredded mozzarella.
- Cover and bake at 350°F for 30 minutes, then garnish with parsley and serve.
Notes
Ensure spaghetti is slightly undercooked before baking for the best texture.
Feel free to substitute Italian sausage with ground turkey or chicken.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
