- 6 cups cut lettuce
- 1/2 cup cherry tomatoes (cut into quarters)
- 1/2 red onion (sliced)
- 1 cup shredded cheddar cheese
- 1/2 cup canned black beans (drained and rinsed)
- 1/2 cup canned corn (drained)
- 1 avocado (cubed)
- 4 cups tortilla strips or tortilla chips
- sour cream, for serving
- salsa, for serving
- guacamole, for serving
- salad dressing of your choice
Instructions
- Brown the ground beef in a skillet over medium-high heat, breaking into pieces and draining excess grease.
- Stir in tomato sauce and taco seasoning; let simmer for 5 minutes.
- Layer cut lettuce in a large bowl as the salad base.
- Add cherry tomatoes, red onion, black beans, corn, and avocado on top.
- Place the seasoned beef over the veggies and sprinkle tortilla strips or chips for crunch.
- Serve with sour cream, salsa, or guacamole on the side.
Notes
Use flavored taco seasoning for an extra kick.
Add tortilla strips just before serving to keep them crunchy.
