Ingredients

  • 1 cup plain Greek yogurt (non-fat recommended)
  • 1 tablespoon Dijon mustard
  • 12 cloves garlic (adjust per preference)
  • 2 teaspoons capers, with some brine
  • ⅓ cup freshly grated Parmesan cheese (make sure it's vegetarian)
  • 2 tablespoons fresh lemon juice (about 1 small lemon)
  • 12 tablespoons extra virgin olive oil
  • Salt and black pepper, to taste

Instructions

  • Combine Greek yogurt, Dijon mustard, and garlic in a blender until smooth.
  • Add capers and a bit of brine; blend.
  • Mix in Parmesan cheese and lemon juice.
  • Drizzle in olive oil and blend until desired consistency.
  • Season with salt and pepper, taste and adjust as needed.
  • Blend until smooth, and enjoy immediately!

Notes

For extra creaminess, increase Greek yogurt.
