- 4 medium chicken breasts
- 1 tablespoon cooking oil (canola or vegetable)
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 tablespoons mayonnaise
- 2 tablespoons coco aminos (can substitute soy sauce)
- 1 tablespoon additional cooking oil
- 3 cups cabbage, shredded
- 1 medium red pepper, sliced
- 1 small head of broccoli, cut into florets
Instructions
- Cut chicken breasts into 4 strips each.
- Heat 1 tablespoon of cooking oil in a large frying pan and sear chicken for 5 minutes on each side.
- Combine mayonnaise and coco aminos in a bowl.
- Toss fully cooked chicken in the sauce mixture.
- Cook cabbage, red pepper, and broccoli in the same pan for 2-3 minutes.
- Combine chicken and vegetables, add remaining coco aminos, and stir for another 3 minutes.
- Serve in plates, drizzling any remaining sauce over the top.
Notes
For extra flavor, marinate the chicken with spices or herbs before cooking.
Avoid overcooking the vegetables to maintain their crunch.
