- 1 pound pecans, chopped
- 1 pound dates, pitted and chopped
- ½ pound candied cherries (red and green)
- ½ pound candied pineapple (red and green or yellow)
- ¾ cup granulated sugar
- ¾ cup all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon kosher salt
- 3 large eggs
- 1 teaspoon vanilla extract (or 1 tablespoon rum, bourbon, or brandy)
Instructions
- Preheat the oven to 250°F.
- Place a pan with boiling water on the bottom rack of the oven.
- Prepare two 9-inch loaf pans with cooking spray and line with parchment paper.
- In a bowl, mix chopped dates and nuts gently.
- Sift flour, baking powder, and salt over the mixture and combine using hands.
- Beat eggs and add vanilla or chosen spirit to the mixture, then combine everything well.
- Fill the prepared pans with batter and press gently.
- Bake for about 1 hour and 45 minutes.
- Cool in the pans for 10-15 minutes before transferring to a wire rack.
Notes
Use room temperature ingredients for better mixing.
