- 1 lb rhubarb, trimmed and chopped into 1-inch pieces
- 1/2 cup granulated sugar
- Juice of 1 fresh lemon
- 2 tablespoons water
Instructions
- Rinse and prepare the rhubarb by trimming and chopping.
- Combine rhubarb, sugar, lemon juice, and water in a pot.
- Heat mixture on medium, stirring until it boils.
- Reduce heat and simmer for 15-20 minutes until soft.
- Puree the mixture in a blender until smooth.
- Return to pot, boil again, then simmer until thickened.
- Pour into a sterilized jar and let cool before refrigerating.
Notes
Use fresh rhubarb for best flavor.
Stir frequently to prevent scorching during cooking.
