- ½ tbsp olive oil
- ½ cup chopped onion
- 1 green bell pepper, thinly sliced
- 2 garlic cloves, minced
- 1 lb small shrimp, peeled and deveined
- ¼ tsp coriander
- ¼ tsp cumin
- ¼ tsp paprika
- 1 tsp lime juice
- Salt and pepper to taste
- ⅓ cup mayonnaise
- 2 tsps Sriracha (or to taste)
- 1 tsp lime juice
- ½ tsp Old Bay Seasoning
- 4 burrito tortillas, warmed up
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup shredded Mexican blend cheese, or your favorite cheese
- 1 cup shredded lettuce
- 1 cup pico de gallo
- 1 avocado, sliced or mashed
- Fresh cilantro leaves
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Sauté onion, bell pepper, and garlic until fragrant.
- Add spices and shrimp, cooking until shrimp are opaque and seasoned.
- In a bowl, mix mayonnaise, Sriracha, lime juice, Old Bay seasoning, salt, and pepper for the aioli.
- Layer ingredients in tortillas: rice, black beans, avocado, lettuce, pico de gallo, cheese, and shrimp.
- Fold sides in and roll tightly, then slice in half and serve with extra aioli.
Notes
Do not overcook shrimp; keep them tender.
Warming tortillas makes them easier to roll.
