This Easy Taco Casserole is a flavorful and comforting dish, perfect for busy weeknights or gatherings. It’s made with layers of seasoned beef, cheese, and fresh veggies, all coming together in one hearty meal that pleases the whole family.

Ingredients

  • 1 tablespoon Avocado Oil or Coconut Oil
  • 1 medium diced yellow or white Onion
  • 1 red Bell Pepper, diced
  • 2 pounds Ground Beef
  • 2 (1 oz) packets Taco Seasoning
  • 1 1/2 cups Water
  • 4 cups Corn Tortilla Chips, coarsely crushed
  • 2 (15 ounce) cans refried beans (pinto and black beans work well)
  • 3 cups shredded Mexican blend Cheese (or favorite variety), divided
  • 2 cups red Salsa (mild or favorite)
  • 4 Green Onions, chopped
  • 1 (3.8 oz) can sliced Black Olives
  • 2 medium Tomatoes, diced
  • 1/2 cup Sour Cream or Greek Yogurt (to garnish)
  • 1/4 cup chopped Cilantro (to garnish)

Instructions

  • Preheat oven to 375°F (190°C) and prepare a 9×13-inch baking dish.
  • In a skillet, heat avocado oil, sauté onion and bell pepper until tender for about 8 minutes.
  • Brown ground beef in the same skillet, drain excess fat.
  • Add taco seasoning and water to the beef, let simmer for about 5 minutes.
  • Layer coarsely crushed corn tortilla chips in the prepared baking dish.
  • Heat refried beans, mix in 1 cup cheese, 1 cup salsa, and sautéed vegetables.
  • Spread the bean mixture over the tortilla chips, then top with the cooked beef.
  • Sprinkle remaining cheese, add green onions and black olives on top.
  • Bake for 20 minutes until cheese is melted and golden.
  • Garnish with diced tomatoes, sour cream, cilantro, and green onions before serving.

Notes

Use lean ground beef for a lighter dish.
Customize spice levels with salsa choices.
Allow the casserole to cool slightly for cleaner slices.
