- 1 cup dairy-free chocolate chips
- 1/8 cup coconut butter
- 1 banana, sliced into 1/4" thick rounds
- 1 pint strawberries, sliced into 1/4" thick rounds
- 1/3 cup chopped roasted almonds
Instructions
- Line a mini muffin tin with wrappers and coat with cooking spray.
- Melt chocolate chips and coconut butter in a double boiler until smooth.
- Add a thin layer of melted chocolate to the bottom of each muffin cup.
- Place slices of banana and strawberry atop the chocolate layer.
- Encapsulate fruit with another layer of melted chocolate.
- Sprinkle chopped almonds over the top of each bite.
- Freeze for at least two hours until chocolate hardens.
- Allow to thaw for a few minutes before enjoying.
Notes
Ensure chocolate mixture is smooth for easy pouring.
Use ripe but firm bananas for optimal texture.
Feel free to experiment with different fruits or nuts.
