- 1 cup sugar
- 2 cups all-purpose flour

- 1 teaspoon baking soda
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 3–4 ripe bananas (mashed)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together sugar, flour, salt, and baking soda.
- Add vegetable oil, eggs, and vanilla to dry ingredients and mix until just combined.
- Mash the ripe bananas and fold into the batter gently.
- Transfer batter to the greased pan and smooth the top.
- Bake for 45 minutes or until a knife comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
Notes
Ensure bananas are very ripe for maximum sweetness.
Avoid overmixing after adding bananas to maintain a light texture.
Store in an airtight container for up to 3 days.
