- 4 large burrito-size tortillas
- 10–12 good quality frozen chicken tenders
- 8 thin slices provolone cheese
- 4 slices bacon, cooked and chopped
- 2–3 cups green leaf lettuce, thinly sliced
- 1/2 cup julienned carrots
- 1 small cucumber, cubed
- Dill pickle chips, to taste
- Chopped green onions, for garnish
- 3 tablespoons Greek yogurt
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon sriracha (optional)
Instructions
- Combine yogurt, mayonnaise, mustard, honey, vinegar, salt, and pepper in a bowl. Add sriracha if desired and whisk.
- Prepare chicken tenders according to package instructions, using an air fryer for extra crispiness.
- Mix lettuce, carrots, and cucumber in a bowl. Drizzle half of the dressing over, toss to coat.
- Spread dressing on a tortilla, layer cheese, bacon, dressed salad, chicken strips, pickle chips, and green onions.
- Fold shorter sides of the tortilla, then roll tightly from the bottom to top.
- Toast in a pan with olive oil for a crispy finish, if desired.
