- 2 1/2 cups (300 grams) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 1/2 cups mashed ripe bananas (about 3–4 medium bananas)
- 1 teaspoon vanilla extract
- 1 (8 ounce) can crushed pineapple with juice
- 1 cup sweetened shredded coconut
- 1/2 cup chopped pecans
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/2 cup chopped pecans for garnish
Instructions
- Whisk dry ingredients in a large bowl.
- Beat butter and sugars until fluffy, then add eggs, bananas, and vanilla.
- Fold the dry mixture into the wet mixture, then add pineapple, coconut, and pecans.
- Transfer to a greased loaf pan and bake at 350°F for 60-70 minutes.
- Cool in the pan for 15 minutes, then on a wire rack.
- Beat frosting ingredients until smooth and spread over cooled bread.
- Garnish with chopped pecans.
Notes
Use very ripe bananas for optimal sweetness.
Do not overmix after adding dry ingredients for a light texture.
Check for doneness at 60 minutes as oven temperatures may vary.
