- ¾ cup Simply Lemonade (or your favorite lemonade)
- 12 ounces ladyfingers (2 packs of 7 ounces each)
- 1½ cups lemon curd (homemade or store-bought)
- 1½ cups heavy whipping cream
- 1 tablespoon lemon zest
- â…” cup powdered sugar
- ¼ cup instant lemon pudding mix (you won't need the whole package)
- 8 ounces mascarpone cheese
- Lemon slices (optional for garnish)
- Strawberries (optional for garnish)
- Fresh mint (optional for garnish)
Instructions
- Prepare a 9-inch square baking dish with nonstick spray.
- Dip ladyfingers in lemonade and layer them in the baking dish.
- Spread half of the lemon curd over the ladyfingers.
- Combine heavy cream and lemon zest, then add powdered sugar and lemon pudding mix.
- Fold in mascarpone cheese and spread half over the lemon curd.
- Repeat layering with ladyfingers, lemon curd, and the remaining cream mixture.
- Cover and refrigerate for at least 6 hours.
- Garnish with lemon slices, strawberries, or mint before serving.
Notes
Use chilled heavy cream for better whipping.
