Ingredients

  • ¾ cup Simply Lemonade (or your favorite lemonade)
  • 12 ounces ladyfingers (2 packs of 7 ounces each)
  • 1½ cups lemon curd (homemade or store-bought)
  • 1½ cups heavy whipping cream
  • 1 tablespoon lemon zest
  • â…” cup powdered sugar
  • ¼ cup instant lemon pudding mix (you won't need the whole package)
  • 8 ounces mascarpone cheese
  • Lemon slices (optional for garnish)
  • Strawberries (optional for garnish)
  • Fresh mint (optional for garnish)

Instructions

  • Prepare a 9-inch square baking dish with nonstick spray.
  • Dip ladyfingers in lemonade and layer them in the baking dish.
  • Spread half of the lemon curd over the ladyfingers.
  • Combine heavy cream and lemon zest, then add powdered sugar and lemon pudding mix.
  • Fold in mascarpone cheese and spread half over the lemon curd.
  • Repeat layering with ladyfingers, lemon curd, and the remaining cream mixture.
  • Cover and refrigerate for at least 6 hours.
  • Garnish with lemon slices, strawberries, or mint before serving.

Notes

Use chilled heavy cream for better whipping.
Allow ample chill time for optimal texture and flavor.
