- 8 medium to large organic lemons
- 4 cups (1 liter) high-proof alcohol (95%) – such as Everclear or vodka
- 4.65 cups (1.1 liters) water
- 2.43 lbs (1.1 kg) white sugar
Instructions
- Wash the lemons and peel off the skins, avoiding the white pith.
- Place lemon peels in a glass jar and add high-proof alcohol. Seal and let infuse for 25 days in a dark place.
- Strain the lemon peels out after 25 days into a bowl.
- Heat water in a pot and add sugar until dissolved to make sugar syrup.
- Cool the syrup slightly and blend it with the lemon-infused alcohol.
- Bottled and chilled Limoncello is ready to serve.
