- 2 ½ cups peas (fresh or defrosted frozen)
- 1 ½ cups chicken stock or vegetable stock (for vegetarian version)
- 2 tablespoons fresh mint, roughly chopped
- Salt and pepper, to taste
- 1 tablespoon crème fraîche, for serving
Instructions
- Dice the onion finely.
- Warm a pot and add butter; sauté onion until translucent.
- Add peas and coat with the onion mixture.
- Pour in stock and simmer until peas are tender.
- Mix in the chopped mint once cooked.
- Blend the mixture until smooth.
- Season with salt and pepper.
- Serve warm or chilled with crème fraîche.
Notes
For a creamier texture, add extra crème fraîche.
Ensure peas are fresh or well-thawed.
