- 4 oz gin
- Juice of 1 lime
- 6 oz rhubarb simple syrup (from above)
- 10 oz tonic water
- Lime slices, for garnish
Instructions
- Combine rhubarb, sugar, and water in a saucepan.
- Bring to a boil, then simmer for 20 minutes until rhubarb breaks down.
- Strain the syrup and cool.
- Fill glasses with ice, add gin and lime juice.
- Incorporate rhubarb syrup, then top with tonic water.
- Garnish with lime slices and serve.
Notes
Ensure tonic water is chilled for the best fizz.
Adjust sweetness by varying rhubarb syrup amount.
Use fresh limes for optimal juice flavor.
