- 1 ounce rhubarb simple syrup
- 2–4 dashes Angostura bitters (to taste)

Instructions
- Combine water, sugar, and chopped rhubarb in a small saucepan.
- Simmer until rhubarb breaks down and mixture reduces by half.
- Strain syrup and let cool.
- In a cocktail shaker, combine bourbon, cooled rhubarb syrup, and bitters.
- Shake vigorously and strain into a glass filled with ice.
- Garnish with rhubarb stalk if desired.
Notes
Adjust the amount of rhubarb syrup to customize sweetness.
Consider adding fresh mint for an herbal note.
