- ½ cup milk of choice
- 1 teaspoon vanilla extract
- ½ cup granola
Instructions
- Cook rhubarb and sweetener in a saucepan over medium heat until tender.
- Allow the mixture to cool completely.
- Blend cooled mixture with yogurt, milk, and vanilla until smooth.
- Pour into popsicle molds and add granola, pressing it down.
- Insert sticks and freeze for at least 4 hours.
- Run molds under warm water to unmold and enjoy.
Notes
Use fresh rhubarb for the best flavor.
Experiment with flavored yogurts for a twist.
