Instructions
- Preheat oven to 425°F.
- Rinse and trim artichokes, removing the stem and top leaves.
- Rub tops with lemon juice to prevent browning.
- Cut artichokes in half and scoop out the fuzzy choke.
- Combine softened butter, garlic, parsley, thyme, and lemon juice in a bowl.
- Place artichoke halves on oiled foil, drizzle with herb butter.
- Fold foil over artichokes and roast for 30 to 35 minutes.
- Remove from oven, let cool slightly, and serve.
