- 5 large tomatoes (fresh and fully ripe)

- 1 English cucumber (fresh and firm)

- 2 Tbsp chopped fresh Italian parsley
- 2 Tbsp chopped fresh cilantro
- 1 pinch kosher salt
- 1 pinch black pepper
- 1/2 cup extra virgin olive oil (high quality)
- 1/4 cup red wine vinegar
- Freshly ground black pepper (to taste)
- 1 tsp kosher salt
- 2 garlic cloves (pressed)
- 1 tsp brown sugar
- 1 tsp dried oregano
Instructions
- Core and cut the tomatoes into wedges.
- Sprinkle tomatoes with brown sugar, kosher salt, and black pepper, then toss.
- Slice the cucumber and add to the tomato mixture.
- Thinly slice red onion and add to the bowl.
- Fold in fresh parsley and cilantro.
- Whisk olive oil, red wine vinegar, pressed garlic, brown sugar, dried oregano, and kosher salt in a small bowl.
- Pour the dressing over the salad and toss gently.
- Cover and let rest at room temperature for 1 to 6 hours.
Notes
Use freshly harvested tomatoes for the best flavor.
Avoid over-marinating to keep cucumbers crisp.
