Ingredients

  • 1 pound fully cooked chicken sausage links (mild or spicy)
  • 1 large red bell pepper, cored and cut into thin strips
  • 1 large green bell pepper, cored and cut into thin strips
  • 1 red onion, halved then sliced into half moons
  • 1 pound grape or cherry tomatoes
  • 3 garlic cloves, peeled and minced
  • Fresh thyme (about 1/8 ounce, a few sprigs)
  • 1 tablespoon dried oregano
  • ½ teaspoon sweet paprika
  • Kosher salt to taste
  • Black pepper to taste
  • Extra virgin olive oil (3 to 4 tablespoons)

Instructions

  • Preheat the oven's broiler and position the rack 6 inches from the heating element.
  • Score the chicken sausage in several spots without slicing through.
  • Toss sliced bell peppers, red onion, and tomatoes in a mixing bowl.
  • Add minced garlic, fresh thyme, dried oregano, sweet paprika, kosher salt, and black pepper to the vegetables.
  • Drizzle with olive oil and toss to coat.
  • Arrange the vegetable mixture on a baking sheet and tuck sausage links between the veggies.
  • Broil for 8 to 10 minutes, watching closely until vegetables soften and sausage chars.

Notes

Don’t overcrowd the baking sheet for even cooking.
Feel free to substitute the sausage with your preferred type.
