- 1 pound fully cooked chicken sausage links (mild or spicy)
- 1 large red bell pepper, cored and cut into thin strips
- 1 large green bell pepper, cored and cut into thin strips
- 1 red onion, halved then sliced into half moons
- 1 pound grape or cherry tomatoes
- 3 garlic cloves, peeled and minced
- Fresh thyme (about 1/8 ounce, a few sprigs)
- 1 tablespoon dried oregano
- ½ teaspoon sweet paprika
- Kosher salt to taste
- Black pepper to taste
- Extra virgin olive oil (3 to 4 tablespoons)
Instructions
- Preheat the oven's broiler and position the rack 6 inches from the heating element.
- Score the chicken sausage in several spots without slicing through.
- Toss sliced bell peppers, red onion, and tomatoes in a mixing bowl.
- Add minced garlic, fresh thyme, dried oregano, sweet paprika, kosher salt, and black pepper to the vegetables.
- Drizzle with olive oil and toss to coat.
- Arrange the vegetable mixture on a baking sheet and tuck sausage links between the veggies.
- Broil for 8 to 10 minutes, watching closely until vegetables soften and sausage chars.
Notes
Don’t overcrowd the baking sheet for even cooking.
