- 2 pounds boneless skinless chicken breast, cubed
- 2 tablespoons regular or spicy curry powder
- 3–4 tablespoons red curry paste
- 1 tablespoon tomato paste
- 2 tablespoons salted butter
- 2 garlic cloves, chopped
- 1 tablespoon fresh ginger, chopped
- 2 cups chopped broccoli florets
- 2 1/2 cups canned coconut milk
- 1/2 cup fresh chopped cilantro
Instructions
- Heat sesame oil in a large skillet over medium-high heat.
- Add cubed chicken with curry powder and sauté for about 3 minutes until browned.
- Stir in red curry paste, tomato paste, butter, garlic, and ginger; cook for 2 minutes.
- Add chopped broccoli and coconut milk; simmer for 5-10 minutes until chicken is cooked.
- Stir in fresh cilantro before serving.
Notes
Adjust spice levels by varying curry paste and powder amounts.
Substitute some coconut milk with heavy cream for extra richness.
Uniformly cube chicken for even cooking.
