- 1 ½ pounds boneless skinless chicken thighs (or breasts)
- ¾ cup sweet chili sauce
- 1 ½ cups chicken broth
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup soy sauce
- ¼ cup additional chicken broth
- 2 Tablespoons cornstarch
- 1 handful fresh cilantro, snipped
Instructions
- Whisk together sweet chili sauce, 1 ½ cups chicken broth, kosher salt, black pepper, and soy sauce in the slow cooker.
- Place chicken thighs on top of the glaze, coating with sauce.
- Cover and cook on low for 6 hours.
- Optional: In a glass, mix remaining ¼ cup chicken broth with cornstarch and pour into slow cooker to thicken the sauce for 20-30 minutes.
- Add cut chicken back, stir gently, and top with cilantro before serving.
Notes
Marinate the chicken in sweet chili sauce overnight for extra flavor.
Adjust the sweet chili sauce quantity according to your spice preference.
