S’mores Cookies bring the joy of the classic campfire treat into cookie form. With a chewy texture and melty marshmallows, they’re a delightful addition to any occasion.

Ingredients

  • 1 cup unsalted butter (room temperature)
  • 1 cup dark brown sugar
  • 1/2 cup white sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup bittersweet chocolate chips or chunks
  • 4 graham crackers (broken in half)
  • 2 Hershey's chocolate bars (or another chocolate of your choice)
  • 8 large marshmallows

Instructions

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, cream butter with dark brown sugar and white sugar until smooth.
  • Add eggs and vanilla, mixing until fluffy.
  • In another bowl, whisk flour, baking soda, and salt together; gradually combine with wet ingredients.
  • Fold in chocolate chips.
  • Refrigerate dough for 30 minutes.
  • On a baking sheet, assemble graham crackers, top with chocolate and marshmallows.
  • Cover the marshmallows with dough to form large cookies.
  • Bake for 12 to 15 minutes until golden brown.
