- 2 cups cooked chicken (shredded or chopped)
- 1 cup corn (drained and rinsed)
- 1 cup black beans (drained and rinsed)
- 1 cup spinach (chopped)
- 1 cup diced red bell pepper
- 1/4 cup diced jalapeño (de-seeded)
- 1/2 tablespoon cumin
- 1/2 tablespoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups Monterey Jack cheese (shredded)
- 1 package egg roll wrappers (20 wrappers)
Instructions
- Mix the chicken, corn, black beans, spinach, red bell pepper, and jalapeño in a bowl.
- Add cumin, chili powder, salt, and black pepper. Stir in cheese until combined.
- Lay out an egg roll wrapper, place filling in center, fold and roll tightly.
- Fry in hot oil for 2-3 minutes on each side until golden brown or bake at 425°F for 15-20 minutes.
Notes
Ensure oil is properly heated for crispiness.
Adjust jalapeño for desired spice level.
