- 3 medium over-ripe bananas

- 1 tsp vanilla extract

- ¼ cup coconut sugar
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp cinnamon

- ½ cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and prepare the muffin tin.
- Blend the bananas, spinach, milk, avocado oil, eggs, and vanilla until smooth.
- Add the oats, coconut sugar, baking soda, baking powder, cinnamon, and salt to the blender and blend until creamy.
- Fold in the chocolate chips if desired.
- Pour the batter into the muffin tin and bake for 23 minutes or until cooked through.
Notes
Use ripe bananas for optimal sweetness and moisture.
Blend the spinach thoroughly to avoid chunks.
Customize with nuts or dried fruits as you prefer.
