- 3 large russet potatoes

Instructions
- Preheat the oven to 400°F (200°C).
- Scrub and prick the potatoes, then bake directly on the oven rack for about 1 hour.
- Cool the baked potatoes, then peel and shred into a bowl.
- Mix in grated onion, sour cream, cheese, butter, salt, and pepper until combined.
- Transfer the mixture to a greased 9×13-inch baking dish and top with extra cheese.
- Bake at 350°F (175°C) for 30-35 minutes until bubbly and browned.
- Garnish with fresh chives and serve hot.
