- 1 pie crust (store-bought or homemade)
- 2½ pounds fresh strawberries, hulled (1125g)
- ¾ cup granulated sugar (150g)
- 5 tablespoons cornstarch
- 1 tablespoon fresh lemon juice (15mL)
- ½ cup water (120mL)
- Sweetened whipped cream for serving
Instructions
- Preheat the oven and bake the pie crust as per instructions. Cool completely.
- Cut strawberries in half, reserving half for later.
- In a saucepan, combine reserved strawberries, sugar, water, and lemon juice. Mash mixture and bring to a boil.
- Dissolve cornstarch in water, stir into boiling mixture. Simmer until thickened, about 5 minutes, then cool.
- Pour thickened mixture over halved strawberries and mix. Transfer into cooled pie crust.
- Chill in the refrigerator for at least 3 hours until set.
Notes
Ensure strawberries are fresh for the best flavor.
Chilling longer improves the texture.
Can add balsamic vinegar for a unique twist.
