This Strawberry Pie is a refreshing treat perfect for summer gatherings. It’s easy to make, featuring sweet strawberries layered in a flaky crust.

Ingredients

  • 1 pie crust (store-bought or homemade)
  • 2½ pounds fresh strawberries, hulled (1125g)
  • ¾ cup granulated sugar (150g)
  • 5 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice (15mL)
  • ½ cup water (120mL)
  • Sweetened whipped cream for serving

Instructions

  • Preheat the oven and bake the pie crust as per instructions. Cool completely.
  • Cut strawberries in half, reserving half for later.
  • In a saucepan, combine reserved strawberries, sugar, water, and lemon juice. Mash mixture and bring to a boil.
  • Dissolve cornstarch in water, stir into boiling mixture. Simmer until thickened, about 5 minutes, then cool.
  • Pour thickened mixture over halved strawberries and mix. Transfer into cooled pie crust.
  • Chill in the refrigerator for at least 3 hours until set.

Notes

Ensure strawberries are fresh for the best flavor.
Chilling longer improves the texture.
Can add balsamic vinegar for a unique twist.
