- 1 pound breakfast sausage
- 6 slices bacon, chopped
- 2 cups shredded cheddar cheese
- 8 large eggs
- 1/2 cup milk
- 4 ounces diced green chiles
- 1 teaspoon salt
- 1 teaspoon cracked black pepper
- 16 ounces frozen tater tots
- 1 tablespoon chopped chives for garnish
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking dish with nonstick spray.
- Cook breakfast sausage in a skillet until browned, then layer it in the baking dish.
- Crisp chopped bacon in the same skillet and sprinkle it over the sausage.
- Add shredded cheddar cheese on top.
- In a mixing bowl, whisk together eggs, milk, green chiles, salt, and pepper, then pour over the layered ingredients.
- Arrange tater tots in a single layer over the egg mixture.
- Bake for about 45 minutes until the egg is set and tater tots are golden.
- Garnish with chopped chives before serving.
Notes
Allow to cool slightly before slicing for cleaner pieces.
