- 2 slices of your choice of bread (whole grain, sourdough, or ciabatta)
- 2 teaspoons unsalted butter
- 1 tablespoon basil pesto
- 1 ounce fresh mozzarella cheese, sliced (2 slices)
- 3.5 ounces roasted turkey breast, sliced
- ¼ cup fresh spinach leaves
- 2 slices of ripe tomato
Instructions
- Heat a skillet over medium-low heat.
- Butter one side of each bread slice with 1 teaspoon of unsalted butter.
- Place the bread slices in the skillet, butter side down.
- Spread 1 tablespoon of basil pesto on one slice.
- Layer 1 slice of mozzarella cheese over the pesto.
- Add roasted turkey slices generously.
- Top with another slice of mozzarella.
- Cover and cook for 5 minutes until golden brown.
- Add fresh spinach and tomato slices.
- Press down gently and cook for another minute.
- Slice in half and serve immediately.
