Ingredients

  • 2 slices of your choice of bread (whole grain, sourdough, or ciabatta)
  • 2 teaspoons unsalted butter
  • 1 tablespoon basil pesto
  • 1 ounce fresh mozzarella cheese, sliced (2 slices)
  • 3.5 ounces roasted turkey breast, sliced
  • ¼ cup fresh spinach leaves
  • 2 slices of ripe tomato

Instructions

  • Heat a skillet over medium-low heat.
  • Butter one side of each bread slice with 1 teaspoon of unsalted butter.
  • Place the bread slices in the skillet, butter side down.
  • Spread 1 tablespoon of basil pesto on one slice.
  • Layer 1 slice of mozzarella cheese over the pesto.
  • Add roasted turkey slices generously.
  • Top with another slice of mozzarella.
  • Cover and cook for 5 minutes until golden brown.
  • Add fresh spinach and tomato slices.
  • Press down gently and cook for another minute.
  • Slice in half and serve immediately.
