- 4 fresh flour tortillas
- 1 tablespoon plain vegetable oil (or more as needed)
- 1 can vegan refried beans
- 2 tablespoons jarred salsa
- Hot sauce (to taste)
- 1 can enchilada sauce
- 1 pack vegan ground beef
- Taco seasoning (to taste)
- Vegan cheddar and/or Monterey Jack style, shredded
- Toppings: fresh diced tomatoes, green onions, or black olives
Instructions
- Heat the oil in a pan and brown the tortillas on each side.
- Sauté the vegan ground beef with taco seasoning until browned.
- Layer two tortillas in a baking pan with refried beans and sautéed ground beef on top.
- Spread enchilada sauce and top with vegan cheese.
- Bake at 350°F for about 10 minutes until the cheese is melted.
Notes
Try using corn tortillas for a gluten-free option.
Experiment with different brands of vegan cheese for preferred texture.
Prepare ingredients in advance and assemble just before baking.
