- 8 cups watermelon, diced (about 1 large watermelon)
Instructions
- Combine water, sugar, and lemon juice in a saucepan over low heat until sugar dissolves.
- Bring the mixture to a boil for about 5 minutes and then cool it.
- Dice the watermelon and puree it until smooth; strain through a sieve.
- Mix the cooled syrup with watermelon juice; refrigerate for at least 2 hours.
- Pour the mixture into an ice cream maker and churn until thick.
- Freeze in an airtight container until solid before serving.
Notes
Use fully ripe, sweet watermelons for the best flavor.
Chill the mixture thoroughly before churning for a smoother texture.
Adjust sugar or lemon juice to your preference before chilling.
